Conference Booth Ideas From a Guy With a Coconut Cart

By Harrison Goldfarb

Every conference hands you a lanyard and a tote bag. After two of them with a coconut cart, my conference booth ideas are pretty much one idea: hand people a cold stamped coconut and get out of the way.

Windandsea Coconuts is a San Diego company serving fresh Nam Hom coconuts hot-stamped with a logo or design and opened in front of guests. We stacked coconuts at GMI Cloud's booth at The AI Conference in San Francisco on September 17, 2025, and served Carnival-stamped coconuts at Gaylord Pacific during the ASTA Travel Advisor Conference on May 27, 2026.

the AI conference

Picture an expo hall the size of an airplane hangar. Steel trusses, skylights, blue carpet, and an ocean of lanyards, all there for artificial intelligence.

And on one white counter, a pyramid of fruit.

Easily the least artificial thing in the building. It grew on a tree. It has no API. It has never once asked to circle back.

GMI Cloud had the coconuts stacked up next to wicker baskets of straws, and one of our crew in black gloves was opening them one at a time on a white towel with a little metal tool, right there in front of everybody. Live demo. Zero bugs.

There was a line. I won't pretend I know who it was for. I have a guess, and I'm biased.

The booth sat right next to a sign pointing to the restrooms and food & beverage. We were technically food & beverage. Best placement in the building. Everybody walks past eventually.

My favorite guest that day was a man in a suit, lanyard on, pulling a rolling suitcase with one hand and sipping a coconut through a straw with the other. No idea if he'd just landed or was running for a flight. Either way, the coconut was coming with him. That's a carry-on.

so what to give away at a booth?

Something cold, with your logo on it, that people sip while they walk the floor. At The AI Conference that's exactly what happened. People grabbed one and wandered the hall with it.

A brochure goes in the bag and dies there. A coconut doesn't fit in the bag. I mean, it could. Please don't.

People treat booth giveaway ideas like a shopping list. Another pen, another tote bag. I get it. But a coconut opened in front of you is a little show first, and then it's a billboard with your logo on it, strolling around the expo hall on somebody else's legs.

the cruise party on dry land

Now the other one. The ASTA Travel Advisor Conference. Carnival threw an event outside under white market umbrellas and string flags, in that bright low sun that makes everyone look like they're in a commercial.

On artificial turf. I go from an AI conference to fake grass. Artificial is following me around.

We had a white cart wrapped in a huge Carnival logo and a row of coconuts on big green leaves, each one hot-stamped with the Carnival wordmark and the little funnel. Straw in, little white tag on a pick. Our staff in white tees and black aprons handed them out with black gloves on.

The lanyards got me. A crowd of travel advisors, at a cruise line party, wearing rental car lanyards. Enterprise, National, Alamo. These people had every form of transportation covered except walking.

And some of them showed up dressed as the cruise. Two women matched head to toe in navy-and-white striped tops, red neckerchiefs and white sunglasses. Full crew uniform. I'd have let them steer.

Then one guest went all the way. Red captain's hat with gold braid, black sunglasses, holding her Carnival coconut like she was about to christen the ship with it.

We were on turf. Nobody got seasick. Great cruise.

what the stamp looks like on a table

People call these engraved coconuts. It's actually a hot stamp, but sure. Here's what branded coconuts for events look like once somebody sets one down: a clean Carnival logo on the shell, on a blue-and-white tablecloth, next to an iced drink and a couple of little bites on a plate.

I love that part. Nobody's even holding it and the logo is still working the room.

conference booth ideas vs. the tote bag

At the Carnival cart a guest came by with a big black conference tote over her shoulder and took a coconut from one of our gloved staff.

Look, I'm not here to fight the tote bag. It's been at every conference since the dawn of time and it will outlive me.

But she had a free hand. We filled it.

If you've got a booth coming up, here's how we do conferences.

I left venture capital in New York to sell breakfast sandwiches on the Pacific Beach boardwalk. Now I compete with tote bags for a living. Some days I win.
